This stunningly beautiful Takohiki was handcrafted here in Brisbane by our knife master Masaaki Saito.
This Takohiki sashimi knife slices away any boneless loins of fish like Tuna, Salmon, Kingfish you name it as well as beef for Tataki or Carpaccio.
The name “ Takohiki “ ( Some call them Takobiki ) can be translated as “ Octopus slicer “ but it’s not specifically designed for though you can easily guess how hard to thinly slice Octopus with a knife not designed for.
The shape resembles Katana sword of samurai or Tanto but these slicing knives has single bevel for precise slicing.
This knife has a large single bevel on right side and the left side with a hollow ground ( concave ).
This is the secret or key for the sharpness of traditional Japanese knives and make your sashimi slices to stand out from others.
The blade is made of Swedish Sandvik 12C27 stainless steel.
12C27 is an amazing knife steel with fine structure and long edge life.
The Tsuchime hammered dimples give an unique texture and character to the knife.
The handle is made of PNG Ebony with Blackbutt ferrule.
A polished natural wooden handle gives a very pleasant, comfortable feel in your hand.
