Aritsugu Paring Knife -  Stainless steel no bolster 120mm ~

Paring knife ( or petty knife in Japan ) is one of the essential tools in the kitchen.

The small blade is perfect for peeling, slicing and any other delicate works.  The resin treated Black Pakkawood handle is heat + water resistant, hygienic and is extremely durable.
This knife is made from premium Japanese stainless steel.  Aritsugu is known as one of the 2 best knife makers in Japan and has more than 400 years history.
Each knife is hand sharpened and edge mirror polished before being despatched. Mirror polished edge is surprisingly sharp and blade stays sharp for long time.

    Got the 150mm version. Long time review actually. Very good profile, ideal for tip work. I used mine mostly for deboning chicken and lamb prime cuts as well as pseudo sujihiki. Edge is very toothy and aggressive, retention is typical Aritsugu excellence. I have been playing with different final grits, I found 4000 to 6000 final grit to be ideal for this. Blade is thin and straight. One of my most used knives for the detail works.
