ARITSUGU GYUTO CHEF KNIFE  CARBON STEEL 180MM ~

Gyuto is a Japanese style multipurpose chef knife and this Gyuto is made in Japan by Aritsugu.

The blade is made of Japanese high carbon steel that holds the edge very well and the thin blade profile allows you to cut effortlessly without forcing.
Aritsugu is one of the highest regarded knife makers in Japan proudly forging blades over 400 years.

Like many other traditional Japanese knives, these knives leave Aritsugu without actual edges and then they are hand - sharpened for perfection at here by our in house knife master Masaaki Saito before being shipped.

Handle is made of durable Black Pakka Wood ( Resin composited under high pressure for density ) secured with 2 rivets.

Please note that this knife is made of high carbon steel.
Blade will rust or tarnish if not maintained properly.

Please wash, wipe dry after use and keep in cool dry area.

Rust eraser or cleansing compound ( like Jiff ) can be used to keep the blade free of rust / stains.

Add an optional saya knife sheath to protect your knife from damages while carrying.

    Finally, I touched it up. Went with 12k grit this time. This knife is very easy to deburr and can take 12k very well. Used it after the touch up, the words that come to mind are very clean, very fine carbide and grain. Clean cut like razor. I do believe that with this type of steel characteristic, it will also accept 6k grit well, if more teeth is required. Love it, very versatile.

    I got the 240mm size. I planned to leave a review after first sharpening, but it becomes clear that this knife holds the edge really well, that will be too long of a wait. So, first of all, excellent edge retention. Cutting characteristic is very clean and pure like shaving razor. However, this steel is toothier than White steel. It still has carbide, which I suspect contributed to the excellent edge holding. The weight distribution for the 240mm is more towards the blade. Overall, this knife is very light, however, it feels powerful in the cut due to weight distribution. It actually balanced right on the pinch when held in pinch grip. Very comfortable for long cooking session. It develops very sexy rainbow looking patina. I will review again once I sharpen it, although I suspect it will be quite a while. Love this knife very much. Another excellent offering from Saito San.
