KIKUMITSU Santoku Carbon Steel Cladded With Stainless 165 mm


Multipurpose knife from KIKUMITSU.  Santoku is a name for this type of  all rounder short stubby knife with wider blade.
It is a great shape and size for home use and for use during service in busy professional kitchens. The blade has a beautiful unfinished touch which you can only see in handcrafted knives. The core Yasuki white 1 carbon steel is cladded with stainless steel to make the maintenance easy while keeping the sharpness of carbon steel at the edge.  Tapered edge is perfect for shredding, slicing, and dicing vegetables, meat and fish.

KIKUMITSU is a small artisan knife maker from Chiba, just an hour or so east of Tokyo by train. They pride themselves by forging knives using traditional methods and skills that was used for sword making in the past. Their handcrafted knives are well balanced, easy to maintain and most importantly stay sharp.
Each knife is hand sharpened and edge mirror polished before being despatched.  Mirror polished edge is surprisingly sharp and blade stays sharp for long time.
Please note that core carbon steel at the edge line would rust if not maintained properly. Please wash and dry completely and store in dry place after use.
This product is handcrafted.  Length, weight,  colour  and design may be slightly different from knife to knife.

    Beautifully made, oh so sharp!

    I bought myself one of these for my 40th from Masaaki, and I love it. It's so sharp it cut through our plastic chopping mats! Very cool knife and beautifully crafted.
