Gokoo is a small artisan knife smith from Chiba, just east of Tokyo.
The knife master Mr Yamakawa specialises in handcrafting knives in small batches using traditional methods and knives from Gokoo are listed on Chiba Prefectural Traditional Crafts.
Chef knives or Gyuto are definitely the most popular all-rounder widely used in both professional and home kitchens. Japanese chef knives have sleek outline and thinner, tapered blade than European chef knives and have more precise performance.
The blade has rustic, unpolished black “ Kurouchi “ finish thinly tapers out towards the edge.
The Yasuki White ( Shiro ) 2 high carbon steel core is “ sanmai “ forged with mild steel for shock absorbent.
The forged Yasuki steel is very hard and stays sharp for very long time.
Finely sharpened carbon steel knife gives you great feeling and once you taste it, it is very hard to go back to stainless steel.
The handle is made of burnt Chestnut wood. Chestnut wood is very light , durable and used to be used for railway pillows because of its toughness.
Please note that blade is made of high carbon steel and may rust if not maintained accordingly.
