Nakiri knife from Yosimitsu Kajiya.

Nakiri is a vegetable knife and most commonly used household knives in Japan back in old days before European style chef knives were introduced.
The straight edge line is perfect for dicing, slicing and shredding vegetables and thinly tapered blade cuts the ingredients without tearing them.
This shape of blade suits a cutting motions of push back and forth diagonally, the way Japanese chefs cut vegetables traditionally and western style rocking motion doesn't work as the vertical corners of tip and heel bumps chopping board.

This light weight knife has a sleek outline with thin blade profile and relatively small handle makes it a perfect knife if you like a compact feel in your hand.

The core White 2 steel ( Shiro #2 ) is a Japanese high carbon steel with a great sharpness, clad with soft iron to gain shock resistance and the octagonal Walnut handle sits very comfortably in your hand.

Yosimitu Kajiya is a local blacksmith from Nagasaki Japan and the blade smith Ide san forges amazing kitchen knives using traditional methods.
Each knife is hand-sharpened at here prior to dispatch for superior sharpness out of box and free shipping Aus-wide.

Please note that knives made from high carbon steel can rust if not maintained properly.
These knives are not designed to cut frozen food, bones or extremely hard / fibrous ingredients like pumpkins, hard cheese rind, Lemongrass or Galangal.  
These are handcrafted knives and the size, colour or look may differ from knife to knife.

    The Yosimitu Nakiri is a light weight, balanced and versatile 160mm nakiri knife. It feels very comfortable in the hand and easily handles a diverse range of vegetables and fruits. It remains sharp thanks to is 60-62rc hardened carbon steel and requires minimal upkeep is used correctly. The blade remains firm and precise when used to bruniose, dice, julienne and shred a wide range of vegetables which gives the user confidence in what they are doing whether it be at home or in a restaurant. Care is needed when using this knife, however, as it is a carbon steel product, and will patenia when exposed to acidic or basic products if not kept clean and dry. However any seasoned chef or serious home cook will easily be able to love and respect this handcrafted knife and keep it in good condition for many years. The Yosimitu family of knives are easily my favourites out of my knife roll and are always a pleasure to use.
