This Kiritsuke was handcrafted by our proprietor and knife master Masaaki Saito here in Brisbane.

Kiritsuke is an authentic Japanese chef knife widely used before Gyuto or western style chef knives became popular.

Like any other trends that come and go and come back, Kiritsuke knives are regaining the popularity once again and more than ever.


This kiritsuke has a sleek outline with a well- balanced thin and tapered blade.

This knife has medium weight and cut so effortlessly especially when you have a big batch of cutting to do.

The Blade is made of Swedish 12C27 stainless steel and has 50: 50 universal edge.

12C27 is a high performance, very reliable knife steel and has an amazing reputation for easy maintenance and long edge life.

The octagonal handle is made from solid Red Ironbark.

This knife is one and only, made by our knife master Masaaki Saito from handle to blade at here and will not disappoint you.

    THIS VERY KNIFE

    A lot of first for me. First Kiritsuke, first Australian made knife, first knife hand made by Saito-San himself, and first time using this type of steel. Knife is quite heavy, which I prefer. Very generous blade height, thin behind the edge, although in my opinion, not a laser. In between laser and workhorse. Edge characteristic is very clean, like White 2, but stainless. I bought this knife a long time ago. Still haven't sharpen it to this day. Actually, still shaving sharp to this day. So, the edge seems to be very slow wearing. In that, it retains the smooth shaving sharpness very long. As the profile is quite flat, high grit edge finish seems appropriate for this knife, as it suits the straight up and down motion. This is hand down the straightest hand made knife I own. Very impressive.
