Samekawa ( Shark skin ) grater specially designed to grate Fresh Wasabi root.
The real flavour and punch of Wasabi is created by tearing Wasabi *s cells into fine paste.
By using Shark skin Grater, start from stem side to root, grate gently in circle and no pressure down toward the grater, the paste become creamy, foamy even.
Grated Wasabi should be used straightaway as the flavours will disappear quickly.
A good tip for re -using old Wasabi is that mash with the back of the knife to reactivate the cells. Adding a small pinch of sugar will increase the hotness too.
