This Usuba knife is designed for cutting vegetables and is handcrafted in Sakai Japan. The region of Sakai is well known for crafting traditional style Japanese knives and swords for centuries.
This authentic Usuba has a single, large surface of edge on one side and hollow concave on the other side. This is the secret for the superior sharpness of single bevel Japanese knives as the hollow side catches the ingredient while the edge side separates or push out the cut ingredient.
The wide surface of rectangle blade works really well slicing, dicing and cutting all sort of vegetables.
The core steel for edge is durable Gold stainless steel forged with 8 Chrome - Vanadium stainless steel.
Each blade has a unique pattern of wave called Kasumi from forging 2 types of steels together.
The handle is made from Ho - Wood ( Japanese Big Leaf Magnolia ) capped with Water Buffalo horn bolster at the top. Ho - Wood is light, naturally antibacterial and increases grips when wet.
This traditional Usuba is handcrafted with love, pride and maybe some scratches from the knife master.
Size, weight and colour of bolster may differ slightly from knife to knife.
This knife is designed for right hander. The measurement for Usuba knife is from tip to the top of handle and not to the heel of the blade. Each knife is hand - sharpened using various whet stones for full performance prior to shipping.
