This beautiful knife was handcrafted by our in-house knife master Masaaki Saito here in Brisbane.
Although this is not exactly a traditional Japanese filleting knife, there were number of requests for this shape and everyone loved the ones we made previously so we made one again.
The skinny outline and the point is great for filleting and also can be used for any fiddly works where an utility knife is needed.
This knife has a thin spine and profile but is non flexible.
The blade with Tsuchime dimples is made of 12C27 Swedish stainless steel.
12C27 is an amazing knife steel that holds the edge for long time and easy to maintain.
The handle is made of Rosewood from Northern NSW, secured with 3 pins.
The polished natural wooden handle gives you a very comfortable grip and fits your hand smoothly.
This unique, rustic knife has a razor sharp edge hand-sharpened by Masaaki and is ready for action.
