This classic style Takohiki knife was handcrafted by our in-house knife master Masaaki Saito here in Brisbane.
This Takohiki sashimi knife slices loins of seafood like Tuna, Kingfish or Salmon / Ocean Trout to name a few or beef, lamb and Kangaroo for Carpaccio or Tataki.
The name “ Takohiki “ ( Or some call them Takobiki ) can be direct-translated as “ Octopus slicer “ although it’s not specifically made for slicing Octopus.
Still, you can imagine easily how hard it is to slice soft and gummy Octopus thinly but this knife can slice away anything on the chopping board with one clean stroke.
This knife has a straighter edge line that allows to keep the straight cut line when slicing sashimi.
The single bevel with hollow ground ( concave ) at the backside allows the beautiful and effortless flow with surgical precision cutting.
This shape of the edge is called “ Kataba “ and is the key for the sharpness of traditional Japanese knives.
The blade is made of 12C27 Swedish stainless steel.
12C27 is a very reliable blade material with great edge retention and balanced hardness.
The polished natural timber handle is made of Red Ironbark.
The Ironbark is known for the high density and has a very comfortable grip that none of the artificial materials can match.
