This Sujihiki slicer was handcrafted by our house knife master Masaaki Saito here in Brisbane.
Sujihiki is a long, thin Japanese slicing knife originally developed to be used by butchers for breaking down loins, trimming sinews and portioning.
Nowadays, Sujihiki is used for a variety of tasks including skinning and cutting fish portions, carving roast or slicing Carpaccio and smoked salmons.
The thin, sleek blade is made from Swedish 12C27 finished to approx 50 / 50 angle for both right and left hand users.
12C27 is an amazing knife steel known for its fine structures and edge retention so this workhorse stays sharp for a long time and also easy to resharpen.
The semi octagonal handle is made of beautiful Rosewood from Northern Rivers NSW.
The polished natural wooden handle is so smooth to feel and fits in your hand comfortably.
