This Nakiri knife was handcrafted by our knife master Masaaki Saito here in Aspley, Brisbane.
Nakiri is the traditional Japanese multipurpose knife with rectangular blade shape.
The name “ Na “ can be translated as Vegetables and “ Kiri “ as cut, cutting or cutter.
As the name suggest, it is great for shredding vegetables and wide blade ( 63mm ) really helps the blade flows without forcing.
The straight blade does very clean cutting when used with cutting back and forth motions but when you try to cut with rocking motions, the pressure escapes as the tip and heel bumps the chopping board and bounce.
The blade is made from 1084 high carbon steel.
1084 high carbon steel has an amazing reputations as a blade material and has great wear resistance, balanced hardness.
The bevel starts tapering from high up to achieve very smooth cutting performances.
The handle is made of Mulga ( Acacia family ) which is very hard / dense and gives you a very comfortable feel when hold.
Please note that this knife is made with high carbon steel and the blade may rust / tarnished if not maintained properly.
Please wash and dry thoroughly straightway after use and keep in dry area.
Apply oil if not using for a period of time and if rusted, scrub with a rust eraser.
