This large stainless steel Kiritsuke is handcrafted by our proprietor / knife master Masaaki Saito here in Brisbane.
Kiritsuke is an authentic Japanese chef knife commonly used by professionals before western style chef knives become popular..
Like any other trends that come and go, Kirttuke ( or K-tip by other name ) are regaining the popularity once again in the recent days.
While very traditional Kiritsuke has a single bevel with straighter edge line, this knife has tapered double bevel with a nice curve to meet the western style cutting motions and knife skills.
The Swedish 12C27 stainless steel is an excellent knife steel with superior edge retention and a balanced hardness.
The semi octagonal handle ( 145mm in handle length ) is made of Black Mulga topped with a Teak ferrule.
The polished natural timber handle gives you a very comfortable grips that none of the artificial materials can.
This knife has a decent size / weight so will be ideal for someone with strong grip and good experience handling large knives.
