This kiritsuke has a great size in width ( 53mm ) so that you do not hit your knuckle when slicing or mincing on chopping board.

The Blade is made of Swedish 12C27 stainless steel and has 50: 50 universal edge.
12C27 is a high performance, very reliable knife steel and has an amazing reputation for easy maintenance and long edge life.
