This Kanto style Honesuki knife was handcrafted by our in-house knife master Masaaki Saito here in Brisbane.
Honesuki is a Japanese style boning knife for preparing poultry and can also be used for boning beef, pork, lamb or fish as well.
This double beveled Honesuki has an acute pointy tip perfect for trimming and de boning but has a good volume from middle to the heel for cutting small bones.
The blade is made of Swedish 14C28N stainless steel.

14C28N has an amazing edge retention, well balanced hardness and thanks to the fine structure, is very easy to sharpen.
The handle is made of Mulga which is a very dense Australian hardwood from Acacia family.
