SAITO KNIVES by Masaaki HONESUKI BONING KNIFE STAINLESS STEEL165mm

This Honesuki is handcrafted by our proprietor and knife master Masaaki Saito here in Brisbane.

Honesuki is a Japanese style boning knife originally designed for breaking down poultries.
In recent years, Honesuki is used for more variety of tasks like boning beef, pork, lamb, filleting fish and also all round dicing or slicing as well.
The pointy tip works beautifully when trimming around bones and the good height at the heel cuts small bones or thick sinew easily.

The blade is made from Swedish 12C27 stainless steel with a 50/50 universal edge for both right and left hands.
12C27 Stainless steel is a brilliant knife steel, known for its very long edge retention and easy maintenance.

The semi octagonal handle is made of Rosewood sourced from Northern NSW, topped with a Black bean ferrule.
Beautifully polished natural wooden handle fits in your hand so smoothly and outshines from other mass produced knives. 

This knife is one and only, handcrafted by knife master Masaaki Saito at here from blade to handle.
