Honesuki is a Japanese style boning knife originally designed for breaking down poultries.
In recent years, Honesuki is used for more variety of tasks like boning beef, pork, lamb and fish as well.
The pointy tip works beautifully when trimming around bones and the good height at the heel cuts small bones or thick sinew easily.
The blade is made from Swedish 12C27 stainless steel and it has 50/50 universal edge.
12C27 Stainless steel is a brilliant knife steel, known for its very long edge retention and easy maintenance.
The handle is made of local Red Gum and Boxwood.
