The Swedish 12C27 stainless steel are known for their fine structure and has an excellent wear resistance with a balanced hardness of HRC 60 so the edge stays sharp but not brittle from the material being too hard.
The wide blade of 60mm helps cut the ingredients without forcing and there is no chance of your knuckle hitting the chopping board.
The smooth, beautifully polished semi octagonal handle is made of local QLD Maple and can be used by both hands.
