This Gyuto ( or Japanese style chef knife ) was handcrafted at here in Brisbane by our house knife -master, Masaaki Saito.

This light weight knife with beautiful Tsuchime dimples from hammers has a 210mm, sleek outline with thin, tapered blade that is so easy to handle by anyone and anywhere.
The blade material, Swedish 12C27 stainless steel has a very fine structure and an excellent wear / corrosion resistance.
We finish the blade with the hardness of HRC 60 so the edge is easy to be re-sharpened, doesn’t get brittle from the material being too hard and most importantly, more than hard enough to stay sharp for long time.
The semi octagonal handle is made of burned Victorian Ash and Silver Ash ferrule.
The wooden handle gives very comfortable feel, grips and add a beautiful ‘Nature” touch to your kitchen.
This knife is one off item made in Australia from handle to blade using local timbers.
