This left hand Deba knife is made by our in house knife master Masaaki Saito here in Brisbane.
Deba knife is a heavy and thick traditional Japanese fish filleting knife.
Deba has a single bevel with a concave at the flat side ( back ) for exceptional sharpness and flow when filleting.
Unlike thin, flexible western style filleting knife, Deba has solid blade developed from Japanese cuisine and food culture using all part of fish to create dishes.
With a sharp Deba knife, you can fillet and cut through fish bones so easily so there is no need to use scissors or cleaver like when you use flexible fish knife.
If you have never used Deba before, you might feel uncertain for the first few goes but once you get used to it, there is no way back.
This Deba is made of Nitro-V Stainless steel for easy maintenance and is designed for left hand users.
The handle is made of Mulga ( Acacia family ) and Ironbark ferrule which are very dense and durable Australian hardwood.
The polished natural wooden handle gives a very comfortable grips.
