This Ai Deba knife was handcrafted by our in house knife master Masaaki Saito here in Brisbane.
Ai Deba is a solid Japanese style traditional fish filleting knife.
Deba knives have a large face of single edge at one side with a slight concave on the back side to create an excellent flow when filleting.
Ai Deba is a little sleeker version of Hon-Deba / Habahiro Deba and because of skinnier shape, works amazingly when filleting while they are strong enough to cut some bones.
Unlike European style thin flexible filleting knife , Deba knife has a strong and solid blade developed from Japanese cuisine that uses all part of fish to create amazing dishes.
You may feel uncertain if you are first time user of Deba knife but once you get used to, there is no way back.
The blade is made of Swedish 14C28N stainless steel which has an amazing corrosion resistance, edge retention and hardness.
The D-shaped handle is made from Grey Iron Bark and Silver Ash sourced from Northern Rivers NSW.
The polished natural wood gives comfortable feel in your hand and add a beautiful colour to your kitchen.
This knife is designed for right hand use and has a sleek outline to make the filleting jobs clean and smooth.
