This Deba was handcrafted here in Brisbane by our in-house knife master, Masaaki Saito.
Deba knives are thick and heavy traditional Japanese fish filleting knives.
Deba knife has a single bevel ( designed for right hand user ) with a concave on the flatter side for an an exceptional sharpness and excellent flow filleting along the bones.
Unlike western style thin flexible filleting knife, Deba has a solid blade with a heavy volume developed from Japanese cuisine using all part of fish to create dishes.
With a sharp Deba knife, you can fillet and cut through fish bones easily without bringing out scissors or cleaver.
If you are a first time user, you may feel uncertain for a few goes but once you get used to and understand how Deba works, there is no way that you could go back.
This Deba is made for right hand users and has a slightly sleeker outline to make the filleting very easy.
The single sided blade is made of Nitro-V stainless steel.
Nitro-V is an amazing blade steel known for the great corrosion resistance and edge retention.
The D-shaped ( also called Chestnut because of the shape ) handle is made from Mulga ( Acacia family ) which is a very dense Australian hardwood.
The polished natural wood gives an amazing feel and grips to your hand.
