Gokoo is a small artisan blacksmith from Chiba prefecture, just east of Tokyo specialised in handcrafting knives in small batches.
Knives from Gokoo are listed on Chiba Prefectural Traditional Crafts and are sought after by many professionals.
This small size knife is one of the essentials in the kitchen whether you are professional chef or home cook.
The length is perfect for slicing, peeling of fruits and vegetables or any sort of fine, delicate works.
This solid, robust blade has a good weight and volume towards the back but has tapered, convex shaped edge called ‘’ Hamaguriba “ which means “ Clamshell blade “ in Japanese.
This is the outline of Japanese Katana swords and is the key for the sharpness and toughness of good Japanese knives.
The blade has beautiful hammer marks called “ Tsuchime “ which also prevents sliced ingredients from sticking to the blade.
The core Yasuki White 1 carbon steel edge is very hard and stay sharp for long time.
The core carbon steel is forged with in stainless steel from both sides for easy maintenance.
Once you experience the sharpness and durability of good carbon steel knife, it is hard to go back to stainless steel.
Each knife is carefully handcrafted by Knife master Mr Yamakawa and finished with hand sharpening.
The mirror polished edge is surprisingly sharp and blade just stay sharp for long time.
Please note that carbon steel edge line exposed may rust if not maintained correctly.

This knife is made with love, pride and maybe some scratches from Mr Yamakawa’s hammer works.
