Aritsugu Chef Knife - Stainless Steel no bolster 180mm ~

Gyuto is an equivalent of western chef knife though the Japanese versions have thinner and sharper edge to perform precise cuttings. Tapered edges are perfect for shredding, slicing, and dicing vegetables, meat and fish.
This knife is made from premium Japanese stainless steel and is a great all-rounder. Aritsugu is known as one of the 2 best knife makers in Japan and has more than 400 years history. Relatively  thin blade makes this knife a great all -rounder with minimum care needed.
Each knife is hand sharpened and edge mirror polished before being despatched.  Mirror polished edge is surprisingly sharp and blade stays sharp for long time.
Durable Black Pakkawood handle without bolster achieved light weight with nice balance throughout.  
180mm- 210mm  is ideal for home use and 240mm or longer for professionals.

    Came very sharp. Got a bit of weight to it. Perfectly balanced between the blade and handle. Very neutral and comfortable. Despite seemingly humble 56 to 58 HRC, keeps an edge FAR longer than expected. I did touch mine up with 8000 grit. Easy to sharpen, easy to deburr. Even with high grit finish, this knife is still toothy and aggressive in the slice and yet can shave very comfortably. To put it simply, very good stuff and excellent Heat Treat. The knife in the flesh is far more beautiful than the pictures. LOVE IT.
