This slicer is handcrafted by experienced knife smiths in Niigata Japan.
Niigata is a very famous region for forging knives and swords since ancient time.
The name “ Sujihiki “ is translated in English for sinew trimming and were originally used by butchers in early days.
Sujihiki is now widely used for many purposes like slicing / portioning fish, meat and of course, for cleaning blocks or loins of meat.
 
The thin, tapered edge has a convex shape called “ Hamaguriba “ which gives strength and longer edge life than straight or hollow - ground edge.
The 3 layered blade has Molybdenum - Vanadium stainless steel in core forged with 13 Chrome stainless steel on both sides.
The handle is made of hygienic Black Pakka Wood with 3 rivets for strength.
Black Pakka Wood is a resin treated hard wood, water + heat resistant and is surprisingly durable.   
We love this slicer because of the simplicity in design and for the great performance.    
 
This product is handmade with love, pride and maybe some scratches from the knife master’s work.  Each knife is hand sharpened prior to shipping for you to experience the superior sharpness.
